This month, a Macaroni Kid reader asked me, “What are your thoughts on soy milk?  My son had a milk allergy and is not interested in drinking milk now.  He will only drink soy milk.” To answer this question, I’d like to compare the basic nutrients in soy milk and cow’s milk and consider the common questions and concerns people have about soy.

Dark Shadows


The film Dark Shadows opened last  weekend to an eagerly awaiting audience of both Tim Burton and Johnny Depp fans. Based on the ABC daytime show which aired during the late 1960s which generated a cult following, what was taken seriously in the late 60s / early 70s comes across as comedy today. Friday, May 18 through Saturday, May 19 - 30th Annual Hillsborough Hog Day

What is Hillsborough Hog Day?

A better question would be “What isn’t Hillsborough Hog Day?”

Now celebrating its 30th Anniversary, Hillsborough Hog Day offers family fun, good food, live music, crafters, merchandise vendors, games and rides, and the area’s largest classic auto show.

The festival starts on Friday night, when pig cooking teams from all over the state roll into town. For the next 12 hours, hams and pork shoulders roast on the cookers and tall tales are exchanged.

Gov. Bev Perdue will open the doors and gardens of the Executive Mansion to visitors starting in September.

Tours of the Victorian-style mansion can be scheduled for Wednesdays and Thursdays from March 7 through June 28, 2012. With morning and afternoon tours. Great Burger recipe. On the check list for Memorial Day weekend with family!

Ingredients:
•    1 lb. ground pork
•    1 lb. ham loaf
•    1/2 can crushed pineapple (drain the juice)
•    1/2 cup brown sugar
•    1 TBSP diced garlic
•    provolone or Swiss cheese slices (optional)
•    Sandwich Thin Buns (optional)

Directions:
•    Combine meat, pineapple, brown sugar, and garlic in a large bowl.  Stir it all together.
•    Heat a large sauté pan over medium heat.
•    I used a 1/3 measuring cup to measure out the meat into the pan.
